Schmaltz's Sandwich Shoppe was opened in 1975 on the Baylor Campus in Waco, Texas. It soon became popular with the students, and the next year another location opened in Downtown Waco followed by the third location in Waco on Valley Mills Drive the next year. The Baylor location was closed in 1982. The secret to the longevity of Schmaltz's is the bread. It is a simple artisan bread made by hand everyday. The sandwiches are oven-toasted giving the bread a crunchy crust covering a soft and airy center. In 1991, a whole-wheat variety was added. Other menu items were added over the years. Soups and salads are popular choices along with a variety of sandwich toppings. There is even a selection of low fat sandwiches.
