Our cuisine is that of Louisiana. New Orleans to be specific. We chose New Orleans because the food is warm, tasty, and delicious. We also chose New Orleans because it is a melting pot, with a cajun foundation, and diverse ethnic contributions. The food is delicious from the first bite to the last. To quote a famous chef from New Orleans by the name of Paul Prudomme, “When the taste changes with every bite, and the last bite is as good as the first, that’s cajun, and that’s Louisiana cooking.” Now we are not from Louisiana, nor are we cajun. We do love food though, and when a meal warms a person from the belly to the toes that’s magic.
