“Hand picked and roasted”
Our work in coffee grew out of an enjoyment of it, and a desire to be intimately acquainted with the processes that result in an exceptional cup. Before we were a roastery, we were home roasters, learning the craft of coffee in the company of our families and friends. With the purchase of our first roaster, and the formation of Sunergos Coffee, roasting naturally became central to our business. Shortly before opening our first espresso bar we purchased and refurbished our second coffee roaster (S.T.A. Impianti 10 k). In this season Sunergos was primarily a micro roastery, later to find public expression through our espresso bar and a growing community of coffee shops throughout the city serving our coffee.
The craft of coffee roasting was something we wished to demonstrate to those who enjoy our coffee, so it was natural that our espresso bar and roastery would share the same space. Since it’s inception we have thought of our espresso bar as a public expression of the roastery, serving as a laboratory where coffee can be communally appreciated and assessed in close proximity to the craft of roasting. The shop affords the opportunity to further engage in the process of coffee preparation beyond roasting, and thoughtfully present the fruit of our craft to the people of our community. After a year of construction and organizational work, the Preston shop opened on September 15 of 2004.
A growing demand for our coffee called for an increase of space and roasting capacity. With our S.T.A. Impianti running five days a week in the Preston shop, we acquired our third roaster(Petroncini 60 K) and began the process of thoroughly restoring it in a warehouse that came to serve as a temporary space for our expanding roasting operation.
With the bulk of our roasting occurring in the confines of the warehouse, our desire for community connection called for the establishment of our second espresso bar in the Beechmont neighborhood, with plenty of space to house our production roaster. With the purchase of the site of the old Potatoe Man’s Comic Book store on Woodlawn Ave. we set out on a two year renovation project toward that end. The Sunergos Woodlawn location opened on July 7, 2010 and we relocated the roasting operation on November 17. After a season of roasting in a private space, we were pleased to introduce the Petroncini to the public, roasting again in the company of our community.
Throughout the life of Sunergos we have enjoyed participating in a diverse community of people who regularly come together around coffee. Out of the fabric of this daily coffee community, people have emerged to join us in our work, enriching and being enriched through working together. The work of Sunergos continues to grow as each person engages their craft, from the roastery to the espresso bar.
