“Experience Fine Dining Tonight”
Before La Scala was opened, the would-be business partners were once employee and employer. Joe Condella, owner of the Muskie Lounge, employed Mona Seagren at the establishment. They didn’t always see eye to eye, for instance, he once fired her, only to realize that he needed her employment. She declined to return to the Muskie Lounge, but would be willing to partner with him in business. After those words had been exchanged, La Scala opened in 1977. At only thirteen years old, young Michael Seagren worked for his mother in the restaurant as a dish boy. It wasn’t long after he was doing dishes that he began his journey in food preparation. Over the years, under the training of many executive chefs and through experience, he gained vast knowledge of the culinary arts. Mona eventually gave the job of cooking fully over to her son, while she served, knowing that serving is more than bringing food in to the customers, but also providing an atmosphere for the customer.
