With more than 10 years experiences, cooking for the most famous food connoisseurs in Asia, Chef Choong embarks to Chicago and introduces contemporary Japanese cuisine using the freshest seafood combining with varieties spices from Thailand. Bold and decisive, bright dishes are presented with a daring blend of design and aesthetic. “Cooking is my passion, cooking healthy is my objective. There are two ingredients that prove to be the best – it is the freshest seafood and Thai Herbal. In Thailand, I have learnt how to cook when I was a little boy. During Summer, my dad would ask me to get lemongrass or pandanus leave from our garden to make the famous Thai lemongrass tea – it is known to calm the heat inside our body.
