This is a day trip from Portland - along the Columbia River Gorge and around Mt Hood. I suggest getting an early start pout of Portland to beat the crowds.
You will also want to pre-purchase and print the recreation passes (see info at https://www.fs.usda.gov/main/crgnsa/passes-permits/recreation) required by the Forest Service in Washington or Oregon at their trailheads and parking lots.

The premier viewpoint for viewing and photographing Vista House and the magnificent. Columbia River Gorge.
There are MANY waterfalls along this stretch of the road - Multnomah is the most famous. You can also find a nice hike in this area.
This is a highly rated restaurant open for lunch on the weekends.
A visit to the Timberline Lodge and the base of Mt Hood is a great stop.
