With Northern Italian influences and a dash of Spain’s high mountain cuisine, Volario’s is hearty and adventurous. Much like Volario himself. The legend of Volario in the Grand Valley is as old as the pines that shade the creek named for him. Volario wasn’t from these parts – like many of us, he visited and couldn’t imagine leaving.
