Los Dos Molinos

We all know food is important for the body because it provides nourishment. Food also brings people together to experience different culinary traditions. With all the different global cuisines that are now available from restaurants, it’s not surprising that many of us have certain favorites.  For Los Dos Molinos, our culinary traditions are rooted in New Mexico. New Mexican food is a fusion of Pueblo Native American, Mexican and Tex-Mex, “Cowboy Chuckwagon,” Spanish, and Mediterranean influences. Beans, corn and chilies are considered to be the basic ingredients of New Mexico cooking.  The New Mexican cuisine is defined by the dominance of hot spicy chilies in green and red varieties. Chilies are the area’s biggest agricultural crop and these are often sliced, chopped, minced or crushed to give flavor to almost everything from burritos and enchiladas to more mainstream items like pizza.  By the early 21st century, these hot spicy chilies especially the green variety has become available and popular outside of the state. Chilies can be bought locally in many parts of the Southwest and are available in most supermarkets. Hatch chilies are the varieties of the species Capsicum and they are grown in the Match Valley, Arrey, New Mexico. The flavor ranges in heat from very mild to very spicy.
