La Vara celebrates the Moorish and Jewish legacies in Spanish Cooking. Chef Alex Raij and Eder Montero, chefs and owners of Manhattan's premier Spanish restaurants El Quinto Pino and Txikito, extend their story in Cobble Hill, Brooklyn. One of the best places in New York to grab a gin and tonic. La Vara uses their own homemade quinine syrup with a variety of gins, not to mention the addition of a horse's neck lemon peel that straddles the glass.
