Rum anchors the cocktail list from bar manager Jeremy Oertel (Dram, Mayahuel), who expresses the colonial theme with drinks that match tropical ingredients (pisco, Mexican Coke) with old-world amari and liqueurs (Ramazzotti, yellow Chartreuse).
