Here in south Louisiana we value tradition, family and good eating. Five Li’l Cajuns™ Crawfish Pies and Pralines are the best Cajun treat you’ve ever tasted – it’s the “What’s for supper?” favorite for all five Cajuns in our family, big and little! Victor’s Cafeteria on Main Street along the Bayou Teche has been a tradition in New Iberia, La., since 1969. The folks eating here know good Cajun cooking. We developed these crawfish pies and pralines as an occasional treat for our customers. But it wasn’t long before their fame began to spread, from New Orleans to that other L.A. Why are they so special? Each pie and praline is individually handmade. We start pie each from scratch, cooking in small batches for consistent quality. The “holy trinity” of Cajun cooking – fresh onions, bell peppers and celery – are sautéed then slowly simmered in a rich base. No fillers, no tough pie dough here. Just delicate, flaky puff pastry and plenty of tasty crawfish in every bite. Our family doesn’t cut corners when it comes to cooking, cher. You won’t find a better crawfish pie.
