As one of the first farm restaurants in the U.S., we have always respected where our food is sourced. From our farm to your table, we offer our guests a rare experience with a breathtaking view and natural setting overlooking the Potomac River. It is our responsibility, as a sustainable, organic property, not only to provide tasty food and creative dishes, but also to deliver a wholesome dining experience that our guests can feel excited to be a part of the process. Our goal is to nourish our community and our environment with a sustainable system, promote education about what we put in our body, serve the freshest foods from our farm and local hand picked ingredients, and encourage earth to table – using our fields as the chef’s pantry. A meal at The Restaurant will progress through a variety of flavors, temperatures and sensations. With this in mind, we aim to surprise and satisfy at each course, while maintaining the proper balance. The cuisine and atmosphere are the focus of every guest’s visit. The quality of the food stems from the freshness and purity of its ingredients. With attention to detail and focus on satisfaction, we strive to create a holistic experience that keeps the diner engaged and focused on texture, flavor, the view and our fields as the pantry. Great food is an essential part of an enjoyable, memorable experience and the arrival of fresh ingredients to the kitchen is treated as a celebration. You are most likely eating produce that was picked by the farmer, at their peak, that morning or afternoon and brought immediately to the kitchen. We believe that sourcing food that satisfies the palate while fulfilling our goals of supporting local producers and suppliers and showcasing our own farm’s bounty gives us the opportunity to create sophisticated food with uncompromised integrity. We use seafood that comes from sustainable sources and insist on wild or organic and free-range meats. Whether dining Thursday, Friday or Saturday evenings, Saturday or Sunday brunch, Sunday evening or for a wedding, rehearsal dinner, corporate or special event – we strive to exceed your expectations.
