Chef Mark Sassone was faced with the challenge of appealing to a wide age range as well the diverse international demographics of Kauai Beach Resort guests. Using his creativity, he rose to the occasion, creating menus that include items ranging from home grown comfort foods to healthy options. Their dining venues have been upgraded and refreshed with the following: Shutters Fireside Lounge added a six foot circular fire pit, creating a cozy outdoor lounge for guests' enjoyment during the day and evening.Shutters Cafe is at a new location and has an updated concept. It offers fresh brewed coffees, espressos, cappuccino, lattes and teas with house-baked muffins and bagels, fruit yogurt parfaits and more. Grab and go breakfast sandwiches and burritos are also available. It includes an executive lounge atmosphere with WiFi, selection of newspapers and four flat screen TVs for anyone wanting their morning news, weather or sports fix.Shutters Lounge will have new tables, chairs and bar stools installed by September 2013. The popular nightly live entertainment schedule featuring local musicians remains unchanged.The Driftwood Bar & Grille refinished counter tops at the bar and new driftwood artwork make the popular Driftwood Bar & Grill the perfect spot to watch sports on flat screen TVs or people watch at the pool. New signage was also installed.Naupaka Terrace is a popular plantation-style restaurant which offers indoor and outdoor dining. It has been enhanced with art. Custom artwork glass, by Jules Cannon of Sun Solutions, has been installed throughout the restaurant. The panels add ambience and offer diners a bit of privacy. Long lost artwork found its way back to life after being stored away for more than 10 years. Yvonne Cheng's batik pieces, originally commissioned in 1986 for the hotel's opening, have been included.
