“A quintessential no-frills, no-fuss restaurant if there ever was one, Joe Lopez’s non-descript brown shack off an Ashland Avenue access road isn’t going to win any awards for curb appeal. But his intricately smoked spare ribs and brisket? They just might leave you standing in a Texas-sized puddle of your own drool. A native of Waco, Texas, Lopez wrestled with the idea of opening up his own barbecue stand “within six months” of arriving in Green Bay roughly 12 years ago. Having mastered the Texas smoker a decade prior, Lopez earned raves for his local catering and church picnic ventures, but never had the gumption to go all in with his own business. That changed last year when he saw the small building that served as office/garage space for an empty car lot on Ashland. After devising a simple menu and an even simpler plan for service, Lopez converted the garage into a kitchen, gladly accepted help from friends who wanted to pitch in and got smoking.”
