Executive Chef Shigeki Matsuzawa opened Shige Cuisine in the summer of 1992, with a vision of creating Boise's finest Japanese dining experience. Shige infuses every dish he creates with his extensive knowledge and passion for perfection. Chef Matsuzawa started his career as a Chef in California before, relocated here in Boise, Idaho with his Beautiful wife Deborah and their lovely daughter Shirah Matsuzawa. Once word of his tasty signature dishes got out, offers from many well known restaurants landed on Chef Matsuzawa's plate. Although he had an affinity for other popular restaurants, Chef Matsuzawa knew that greater challenges and opportunities awaited him to open up his own cuisine. In 1992, Chef Matsuzawa began his journey of openning up his own restaurant in downtown Boise, Idaho. He was given an opportunity to experiment, and created quite an eclectic menu. However, he never lost sight of his passion for authentic Japanese cuisine. He knew that in order to create the dishes he wanted to share with the world, using only the freshest ingredients available, he would have to establish his own restaurant. Shige Cuisine is committed to serving only the finest foods, made with the freshest ingredients. All of our dishes are made from scratch.
