The Fieldhouse is a whole foods, local foods restaurant and is a Certified Green Restaurant. We are getting back to the way food ought to be. Food ought to be made, not processed like much of today’s food. Somewhere along all this processing we have lost the art of food as well as much of the flavor and nutrients. Food is a celebration, and should be shared among friends and family, and even strangers, future friends. I’ve been called old school in the way that I cook and perceive the community of food, and that exactly what we need, to get back to the “the old school”. The Fieldhouse is an example of that philosophy in where we as people live more sustainably. Eat more sustainably. Consuming more sustainably. That means eating foods that are native to our region and reducing our waste in the process. We live in a beautiful agricultural state and there is an abundance of wonderful food. There are artist of their trade who are using their love through their hands to create and sustain some amazing meats, cheeses, produce and more. The Fieldhouse is blessed to use many of these products and to have relationships with many of these wonderful people. The Fieldhouse is an entity that thrives on making selfless decisions based on the greater good.
