“A BYOB barbecue joint”
la Barbecue was born of fire and controversy and has risen to the upper echelons of the barbecue world. We cook world class beef, pork, turkey and sausage in our custom fabricated smoker using local, perfectly seasoned post oak. Speaking of sausage, did you know that our sausage is hand made, in house, daily? See, we just couldn’t find a sausage that we loved. And if you want something done right sometimes you have to do it yourself. Is it more work? Considerably. But if we were scared of workin’ we’d have chosen a job in government. Instead we wake up at times you’ve never even heard of to churn out what we think is the best hot guts in town. Oh, and for you non-Texans, we call sausage “hot guts” here in the Republic. Now folks, any old Jack can start a fire and throw meat on it but that doesn’t make it barbecue. In the barbecue world there is no more revered position than the pit boss. The pit boss takes years to train and has considerable skill and instinct when it comes to smoked meat. Our pit boss, John Lewis, worked for years as the man behind the meat over at world renowned Franklin Barbecue. There he perfected his style and recipes. Now, he’s truly free to take his talents to the extremes. One taste of his smoky, melt-in-your-mouth brisket will be enough to convince you that this guy has some serious skills. The face of la Barbecue, and the person very likely to cut your meat the next time you come by, is Alison Clem. We call her Ali. She’s a seasoned barbecue veteran and sweeter than banana puddin’. Did we mention she’s also the general manager? Ali’s in charge of the day-to-day, so if you have questions, would like to inquire about on or off site catering, or just wanna tell her how much you love the food come say hi. Our job at la Barbecue is to make the best barbecue you’ve ever put in your mouth. Throw in some free beer and we think you’ll have a blast.
