“best meal in Aspen”
In 2001, John Mariani of Esquire Magazine named Rustique Bistro one of America’s Best New Restaurants. But savvy Aspenites already knew that it was the best value in town for authentic country French cooking. The food is farmhouse fare, full of robust flavors and hearty portions. Specialties include: Black Mussels in White Wine, Thyme and Chili; Cheese Souffle; Braised Short Ribs in their own individual pot; Poached Pear and Roquefort Salad; Vanilla Profiterolles with Warm Chocolate Sauce. Rustique also features one of the best cheese selections in town. The setting is reminiscent of a Provencal country inn, complete with hanging dried herbs and flowers, used copper pots, battered shutters and worn stucco walls. The artwork depicts rustic villages perched on the hillsides of the Mediterranean, and warm candlelight enhances the feeling of coziness and “being at home”. Prices are reasonable and the staff is friendly. We were also named “Best Meal in Aspen” by the Denver Post, so clearly Rustique is a must when in Aspen.
