I also enjoyed Cades Cove. There are some great scenic views available where you can pull over to take pictures... I, however wasn't particularly interested in getting out at all of the settlement stops. There's old chuches and dwellings which you can see from the road, and that was fine for me. I went early April and if you go early in the morning around 9 or 10 you won't hit traffic, however around 12 you will see an increase. Must do Abrams Falls

This is a great hike to do as part of Cades Cove! About half way around the loop you'll see a driveway on the right that will take you to Abrams Falls trail. It is about 2.5 miles each way, so be prepared for it to take at least 3-4 hours depending on how fast or slow you want to take it. It's a well-made trail, however there are roots and many rocks that you will need to be weary of. Don't be discouraged though, I saw people of all ages and I mean from young children on the backs of their brave parents, to quite old that were prepared with walking sticks (or ski poles).
Once you get there, you can enjoy the view of the water and the falls. Pick a tree or rock of your liking to take a rest on. I personally decided that I well deserved to take my shoes off and give my feet a dip in the cool water. This is a great opportunity to eat your packed lunch, or wander over to the side of the falls to take your picture, or selfie.
Bring plenty of water with you and enjoy!
